Crêpes Recipe
List of ingredients
250 g of classic wheat flour (T55)
4 fresh eggs
450 ml of slightly lukewarm milk
1 tablespoon of vanilla extract
1 sachet of vanilla sugar
2 tbsp. of sugar
1 pinch of salt
50 g melted butter
Steps
Melt the butter in the microwave and lightly heat the milk which should be barely lukewarm (this avoids lumps)
Mix the sifted flour, sugar, salt in a large bowl. You can replace 50 g of flour with cornstarch for lightness
Add the eggs, the melted butter, then gradually the milk, beating well with a whisk to avoid lumps forming.
Add the vanilla and leave to rest for 30 minutes before starting to cook.
Heat a knob of butter in the pan and add a ladle of dough
Cook your crêpes on each side until they are nicely browned
As you go, set aside on a plate, covering with a sheet of aluminum foil to keep them warm and soft.
You should get between 15 and 20 pancakes with a 20 cm diameter pan.
